MACARONI SALAD
INGREDIENTS:
1 (8oz) pk elbow macaroni, cook and set aside
Hard boil 8 eggs, dice/cube when cool, saving 2 or3 eggs to slice or halve for deco on top of salad
1 diced green pepper
6 sliced green scallion onions (or 1 LG reg diced onion)
1 med jar green olives, sliced
1 1/2 cup mayonaise
2 tbsp yellow mustard
DIRECTIONS:
Mix all ingredients together, salt and pepper to taste.
Place sliced/halved eggs on top as deco, sprinkle lightly with paprika and refridgerate.
Serve cold and enjoy!!

PENNE PASTA WITH GOAT CHEESE SALAD
INGREDIENTS:
51/2 ounces goat cheese (Feta does well also)
2 cups courcely chopped Arugula, stems included, or green pepper
1 cup quartered tomatoes
1/4 cup olive oil
2 tsp. mimced garlic
1/2 tsp. ground black pepper
1/2 tsp. salt (optional)
8 ounces penne pasta
DIRECTIONS:
Cook pasta, drain and set aside. Crumble cheese into large serving bowl.
Add remaining ingredients and pasta, toss well and refrigerate.
Calories 317 / Total fat 18 mg. / Cholesterol 21 mg.
